Gluten Free Banana Muffins
I’ve been on a muffin kick, just because they’re super easy to make & a great snack to keep on hand. You can make all sorts of muffins – fruit, veggies, sweet, savory. I just love them & so does my daughter. In fact, her favorite are my peanut butter & banana muffins, because she LOVES bananas. I couldn’t pass up on making these when I saw this recipe on my Facebook feed; which is actually a banana bread recipe, but I made muffins instead & changed up the recipe a little, but not much.

Ingredients:
1 cup coconut flour
2-3 smashed ripe bananas
4 eggs
3 tbsp. butter
3 tbsp. coconut oil
2 tbsp. honey or maple syrup
1/4 tsp. salt
1 tbsp. cinnamon
1 tsp. graded nutmeg
1 tbsp. pure vanilla extract
Directions:
- Preheat oven to 350 degrees
- Melt together the butter & coconut oil in small sauce pan.
- Mix all dry ingredients in one bowl & the wet ingredients in another bowl, then slowly add the dry to the wet slowly blending together all ingredients.
- Pour the mixture into a muffin tin & bake for 15-20 min, or until a toothpick comes out clean.
